Lechon (pork) Highway- Cayey, Puerto Rico

If you love pork you must take a joy ride down the Lechon Highway! For those of you that don't speak spanish “lechon" means pork. But more that the literal translation, “lechon” also refers to the way and style of cooking the pork. This isn't just bacon, its the WHOLE PIG!
The Lechon Highway is located in Cayey, near Rio Guavate on the 184 Highway. We took the Expreso Luis A. Ferre to Highway 184. Look at the picture on the map I included) Google maps is alway pretty handy and should help you as well.
We stopped at many “Lechoneras”, each with their own twist on the classic Puerto Rican and Caribbean dish. While the pig slowly twisted over the fire, the pit master carefully carved a custom piece of pork. If you ask nicely, you can request certain cuts and pieces. My fiancee has a taste for the crispy skin, “chicharrones”. It is almost like candy, crunchy and a little sweet and salty. The pig itself was delicious, tender, moist and unlike any pork you have ever tasted in the states. It is well worth the drive, but don't just take my word for it, take a drive down the Lechon Highway and taste the island!
